🍽️ Cooking Instructions

To prepare a traditional Hyderabadi biryani dish using this masala:

  1. Prepare Ingredients:

    • 1 kg of meat (beef, mutton, or chicken)

    • 500 g of Basmati or Chashi Aromatic rice

    • 2 cups of chopped onions

    • ½ cup of sour yogurt

    • 1 tablespoon of lemon juice

    • ¼ cup of milk

    • ¼ teaspoon of yellow food color

    • ½ cup each of chopped coriander and mint leaves

    • 4 chopped green chilies

    • ¼ cup of raisins

    • 10–12 chopped cashew nuts

    • 3 boiled eggs (chopped)

    • 1½ cups of edible oil

  2. Fry Onions: Heat oil and fry the chopped onions until golden brown. Once cooled, crush them and set aside half for garnishing.

  3. Marinate Meat: Mix the remaining crushed fried onions with the meat, sour yogurt, lemon juice, Radhuni Hyderabadi Biryani Masala (1 packet), and salt as required. Marinate for 30 minutes.

  4. Cook Meat: After marination, cook the meat until it's done and a thick gravy forms.

  5. Prepare Rice: Wash and soak the rice. Dissolve the yellow food color in milk and keep aside.

  6. Layering: In a large pot, layer the cooked meat and gravy at the bottom, followed by a layer of half-cooked rice. Sprinkle the milk with dissolved food color, chopped herbs, green chilies, raisins, cashew nuts, and chopped boiled eggs over the rice.

  7. Final Cooking: Seal the pot with a tight-fitting lid and cook on low heat (dum) until the rice is fully cooked and the flavors are well blended.
